Ammonium citrate is a white crystalline powder that is commonly used in the food industry as a flavoring agent and acidity regulator. It is also used in the pharmaceutical industry as a buffering agent and in the production of dental cements.  Ammonium citrate is soluble in water and has a slightly acidic taste.  It is derived from citric acid and ammonia and has the chemical formula (NH4)3C6H5O7.  It is generally recognized as safe (GRAS) by the US Food and Drug Administration (FDA) for use in food products.
