Isomalto-Oligosaccharide Isomalto-Oligosaccharides (IMO) are short chain non-digestible carbohydrates naturally found in products such as soy sauce and honey. They are also prepared as food ingredients commercially from starch by microbial enzymatic transformation. IMO are primarily glucose oligomers with α-D-(1 → 6)-linkages and α-D-(1 → 4)-linkages, including among others isomaltose, panose, and other higher branched oligosaccharides.
