Modified Atmosphere Packaging Modified atmosphere packaging is the high-precision replacement of various gases (oxygen, carbon dioxide, nitrogen, etc.) into boxes or bags for fresh-keeping packaging to extend the shelf-life of products. In modified atmosphere packaging, carbon dioxide (CO2), oxygen (O2), and nitrogen (N2) must be maintained in an appropriate ratio so that the meat can be stored for a long time and in good condition in all aspects. The following table shows the gas mixing ratios for modified atmosphere packaging used in various meat products. CO2 can inhibit the growth and reproduction of most aerobic spoilage bacteria and molds; O2 inhibits the growth and reproduction of most anaerobic spoilage bacteria; maintain the color of fresh meat, maintain the oxygen-rich respiration and freshness of fresh fruits and vegetables; N2 is used as filling gas. The composition ratio of the composite gas is appropriately selected according to the type of food, preservation requir…
